Rice bowls are all the rage and I am here for it! I love the idea of being able to throw a bunch of food into a bowl and calling it a meal. The best thing about rice or taco bowls is, they are totally customizable and easy to make! I love them with chicken, but I also love Steak Fajita Rice Bowls which I shared earlier this week! The Instant Pot makes this recipe so easy that it almost seems crazy...you can seriously make perfectly moist and flavorful shredded chicken in 15 minutes from either fresh or frozen chicken breasts, and that makes this mom super happy! No more stressing over forgetting to lay something out to thaw for dinner!!
To make these amazing taco bowls, you have to start with the shredded taco chicken, which is so easy to make in the Instant Pot or electric pressure cooker with only chicken, chicken broth or stock, salsa and taco seasoning. Ingredients
- 3-4 frozen chicken breast or 6- 8 chicken breast tenders
- 1 cup of chicken broth or stock
- 1 cup of salsa
- 2 tablespoons of taco seasoning
Instructions
- Place 3-4 frozen chicken breasts or 6-8 chicken breast tenders in your pressure cooker.
- Add 1 cup of chicken broth or stock.
- Add 1 cup of salsa.
- Add 2 tablespoons of taco seasoning.
- Stir together and seal the lid of your pressure cooker.
- Set timer for 15 minutes and allow pressure to build and cooking to begin.
- Once the timer has stopped you can either remove the chicken and shred immediately or leave the chicken and shred when you are ready to use it.
- Shred the chicken and return it to the pressure cooker and stir together with the remaining sauce.
- Use a slotted spoon or tongs to remove the chicken from the sauce.
- Serve in a bowl over rice, cauliflower rice or quinoa and top with avocado, black beans, cheese, lettuce, caramelized peppers and onions, guacamole, sour cream, or tomatoes.
