Instant Pot shredded chicken taco bowls

Rice bowls are all the rage and I am here for it! I love the idea of being able to throw a bunch of food into a bowl and calling it a meal. The best thing about rice or taco bowls is, they are totally customizable and easy to make! I love them with chicken, but I also love Steak Fajita Rice Bowls which I shared earlier this week! The Instant Pot makes this recipe so easy that it almost seems crazy...you can seriously make perfectly moist and flavorful shredded chicken in 15 minutes from either fresh or frozen chicken breasts, and that makes this mom super happy! No more stressing over forgetting to lay something out to thaw for dinner!!

To make these amazing taco bowls, you have to start with the shredded taco chicken, which is so easy to make in the Instant Pot or electric pressure cooker with only chicken, chicken broth or stock, salsa and taco seasoning. The instructions are listed below in the recipe card, but if you are a more "visual" person, there are step-by-step photos in THIS post on How to Make Shredded Taco Chicken in the Instant Pot that I shared previously!
