These quick and delicious steak fajita bowls are made with steak, cilantro-lime rice, caramelized peppers and onions, black beans and avocado, but you could add guacamole, sour cream, tomatoes or serve with brown rice or quinoa! They are so versatile!

The new year is typically a time when we all take a step back and make an effort to eat better and be more conscious of what we put in our bodies. One of my family's new favorite meals to eat are rice bowls! They are super versatile, easy to prepare and totally customizable. I've teamed up with my friends at the Kentucky Beef Council to show you how to make these healthy steak fajita rice bowls that have become a major favorite in our home, and are made with a lean cut of sirloin. Beef is such an amazing protein choice that not only tastes great but is also a source of strength. It has the nutrients, like high quality protein, iron, zinc and B-vitamins, that myself and my family need to stay strong and healthy, physically, mentally and emotionally.
How to Make Steak Fajita Seasoning
In a baggie, mix together ½ teaspoon of cumin, ½ teaspoon of garlic powder, ¼ teaspoon of onion powder, ¼ teaspoon of smoked paprika, ⅛ teaspoon of salt and a pinch of pepper. Mix well before using.
How to Make Fajita Steak with Peppers and Onions
- Sprinkle the fajita seasoning on both sides of the steak, and allow it to come to room temperature (should sit out of the refrigerator for about 30 minutes)
- In a large skillet, heat 1 tablespoon of olive oil.
- Add thinly sliced peppers and onion and cook for 6-8 minutes, or until softened to your liking.
- Remove the peppers and onions and set them aside.
- Add the tablespoon of butter and allow it to melt, then sear the steak for 3-4 minutes on each side, or until it reaches your desired doneness.
- Let it rest for 5 minutes before slicing thinly.
- Serve on rice with your choice of toppings.
What temperature is the best for steaks?
For steaks (½ inch or thicker, insert an instant-read thermometer horizontally from the side, so that it penetrates the thickest part or the center of the steak, not touching bone or fat.
For medium rare the temperature should read 145°F, the temperature for medium steaks should read 160°F, and well done is 170°F.
After cooking, let steaks rest before serving.

The great thing about fajita bowls is that you can add any topping you like and as many toppings as you like. Ingredients

- 1 center cut sirloin steak (around 1 lb.)
- 1 red bell pepper, thinly sliced
- ½ large yellow onion, thinly sliced
- ½ lime
For the Fajita Seasoning
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon of paprika
- ⅛ teaspoon of salt
- a pinch of ground black pepper
Instructions
