I love having shredded chicken on hand in my refrigerator at all times, so once a week, I cook a huge batch. I use shredded chicken in so many recipes like soups, casseroles, tacos, enchiladas, sheet pan nachos, bbq chicken sandwiches, chicken salad and it's absolutely delicious on its own. I use it the most in my Instant Pot White Chicken Chili, which has won a few chili cook-offs, and is a huge hit with our whole family! Once the Instant Pot has finished cooking, allow the pressure to release naturally for about 10-15 minutes, then move the seal to quick release until all of the steam has finished releasing. Then remove the lid away from your face.
