This is a recipe that I've been meaning to share for a long time, but I had never made it before. It's my Grandmommy's amazing macaroni salad recipe, and to be honest, I loved it best when she or my mom made it. Well, now that I've made it myself, it's going to be a summer staple in my house! And of course, I had to share it, because it is absolutely THE BEST!
You may think that macaroni salad should be made with elbow macaroni noodles, but I have to tell you, making this macaroni salad with shells instead makes it sooo much better because all of the veggies and boiled eggs nestle inside of the shells so you get a little in each bite! It's hands down the most fresh tasting mac salad I've ever had, and it's also approved by my husband and kiddos. I'll be taking this delicious side to cookouts from now on!

What's in macaroni salad?
- 1 box of medium pasta shells (16 oz. box)
- 5 boiled eggs, chopped finely
- 1 cup of red bell peppers, chopped finely
- 1 medium jar of pimentos with juice
- 1 cup of celery, finely chopped
- ¼ cup of onion, finely chopped
- ā cup of sweet pickle relish
- ā cup of mayonnaise
- 1 teaspoon of sweet paprika
- juice of 1 ½ lemons
- salt to taste
How do you make macaroni salad?
- Boil and drain pasta shells according to the directions on the package.
- Cool pasta with cold water.
- In a large bowl, mix the red peppers, pimentos, celery, onion, relish and mayonnaise together.
- Slowly fold in the cold, drained pasta shells.
- Stir in boiled eggs.
- Store in the refrigerator for about an hour.
- Remove from refrigerator and add paprika, lemon juice and salt to taste.
- Store in the refrigerator until ready to serve.
