When the weather gets warm and we are cooking out on a nightly basis, eating the same old side dishes gets super boring. It's also nice to be able to make something ahead of time and just pull out at dinner time. This easy broccoli salad recipe is perfect for when you may have little time to eat due to baseball practice or long days at the pool. It's also the perfect thing to take to a cookout or BBQ. My husband and kids love it because it has just a hint of sweetness, and of course...bacon! It's super easy to put together and gets even better after sitting in the refrigerator for a few hours or even overnight. I promise, it will be a hit wherever you take it!
What's in broccoli salad?
- 1 cup mayonnaise
- 3 tbsp sugar
- 2 tbsp vinegar
- ½ cup dried cranberries
- 7 cups broccoli florets, chopped
- ½ cup of shredded cheddar cheese
- ¼ cup diced red onion
- 8 slices bacon cooked and crumbled
How do you make broccoli salad?
- Mix the mayonnaise, sugar and vinegar together in a small bowl to make the dressing.
- Add the rest of the ingredients to a large bowl.
- Fold in the dressing and refrigerate for at least 2-3 hours.
- Serve cold.

I'm not sure the consistency would be right if you partially cook it. I am not a huge fan of cooked broccoli either, but once this salad sits in the refrigerator for some time, it softens a little bit and has sooo much flavor!
