Breakfast is by far the meal I struggle with the most. I don't typically get hungry until around 11:00 am, and by then, it's almost time for lunch. I'm also not a huge fan of breakfast foods...like seriously, I would rather eat spaghetti for breakfast than bacon and eggs...weird, right. But, spaghetti is not exactly a healthy breakfast choice, so I'm trying some new things. I'm making myself eat by 9 am, and veering towards Green Smoothies and these fabulous 4 ingredient peanut butter oatmeal balls. They are so good and it only takes two to fill me up and get me through until lunch. Plus, they are full of goodness!
4 Ingredient No Bake Oatmeal Energy Balls Recipe
Ingredients
- 1 Cup of Old Fashioned Oats
- ½ Cup of Peanut Butter
- ⅓ Cup of Honey
- 1 Teaspoon of Vanilla Extract
Instructions
- Blend or mix together and form into small bite sized balls. Enjoy!
- Category: Breakfast / Snack
I use my little KitcheAid chopper to mix the ingredients together. It only takes a few pulses to get it all mixed up!
Next, I transfer it to a small bowl and form little balls.
I store them in a baggie and leave them in an air tight container and keep them on my counter. One batch lasts me about a week, if I have two per day. I have to tell you, I'm not a HUGE peanut butter fan, but these have totally changed that for me. They help give me a little extra energy to get through the morning, and I'm not starving by lunch time. Hope you enjoy making your own!
