I've been looking for healthier alternatives to carbs lately, and zoodles are the perfect substitution for pasta. I'm not on any kind of diet, just trying to eat a little more healthy and cut the complex carbohydrates as often as I can. I have to be honest, at first, I didn't know if zucchini noodles would cut it, but I absolutely love them and so does the rest of my family. We've been making them for a couple of years using this Method for Cooking Zucchini Noodles and have made many of these Zucchini Noodle Recipes. They are so versatile and can be enjoyed cooked or raw...it's totally your preference.
How Do You Make Zucchini Noodles?
Start by using a spiralizer. You simply place your zucchini on the base of the spiralizer and twist the knob. On the other side, you end up with perfect zucchini noodles! I love this Briefton Spiralizer for my zoodles, and it works great on tons of vegetables! If you have a Kitchen Aid mixer, THIS spiralizer attachment may be a better option.
Place the zucchini on the spiralizer and turn the nob until the entire zucchini is zoodled.
What's In Zucchini Noodles Alfredo?
- zucchini noodles or zoodles
- ½ cup butter
- 1 pint heavy whipping cream (2 cups)
- 4 ounces cream cheese
- ½ teaspoon minced garlic
- 1 teaspoon garlic powder
- 1 teaspoon italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup grated parmesan cheese
- store bought chicken meatballs (optional)

Ingredients
- 2 tablespoons of olive oil
- zucchini noodles or zoodles
- ½ cup butter
- 1 pint heavy whipping cream (2 cups)
- 4 ounces cream cheese
- ½ teaspoon minced garlic
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup grated parmesan cheese
- store bought chicken meatballs (optional)
Instructions
For the Zucchini Noodles:
- heat 2 tablespoons of olive oil in a non-stick pan until it shimmers
- Add 3 cups of spiralized zucchini noodles to the pan and saute until softened.
For the Alfredo Sauce:
- In a medium saucepan add butter, heavy whipping cream, and cream cheese.
- Cook over medium heat and whisk until melted.
- Add the minced garlic, garlic powder, Italian seasoning, salt and pepper.
- Continue to whisk until smooth.
- Add the grated parmesan cheese.
- Bring to a simmer and continue to cook for about 3-5 minutes or until it starts to thicken.
Fold as much of the Alfredo sauce into the zucchini noodles as you like. Serve immediately.
Notes
You can add protein by adding chicken meatballs, Italian meatballs or even grilled chicken or salmon!
