    Easy Cajun Chicken Pasta

    Cajun Chicken Pasta

    Our family may have a slight pasta problem.  We could truly eat it every day.  Spaghetti, macaroni, ziti, linguine, bowtie, you get the idea.  One of my family's absolute favorites is my cajun chicken pasta.  It makes it onto our weekly dinner menu at least every other week.  It makes me truly happy because it's a rare chance to get my son to eat grilled chicken.  It is truly delicious, and couldn't be more simple to make.

    cajun chicken pasta ingredients

    ~Ingredients~

    1 box of penne pasta

    1 jar of store bought alfredo sauce

    2 cups of finely shredded mozzarella cheese

    3 chicken breasts

    your choice of cajun seasoning

    ~ Prep It~

    Preheat your oven to 350 degrees.

    Grill Your Chicken Breasts and shred with fork.  Boil your pasta and drain in a colander.

    Spray an oven safe dish with cooking spray, and add your cooked penne pasta.  Mix in your container of alfredo sauce and shredded grilled chicken.  Gently stir ingredients together in your dish.  Sprinkle with cajun seasoning, and cover  the entire top with mozzarella cheese.

    ~Bake It~

    Place uncovered in the center of your oven and bake for 20 minutes.  Turn your oven's broiler on high and leave your dish in until the top of your cheese is slightly brown.  (You can skip the broiling if you  like.)

    ~Plate It~

    Place a serving on your plate with a nice salad (I paired mine with a grilled romaine salad).  Top with fresh parmesan cheese and a sprinkle of red pepper flakes!

      The garlic chicken I made last night. Brown sugar overflowed, dripped all over the oven, caramelized, and then hardened as it cooled. That should be fun the next time I turn it on!

      It's not a recipe but it definitely leaves my oven a mess...using my oven to fry bacon! I love frying bacon in the oven because the greasy mess is contained there and not floating in the air and landing on my kitchen cabinets and hood vent. Plus, I cook it on a rack on top of a pan so all the grease drips into the pan!

      It seems that everytime I bake a berry cobbler, I manage to get berries in the bottom of my oven. I do my bacon in the oven to avoid the mess on my cooktop. Maybe just cooking is the problem, but as it is my favorite thing to do, I just clean and clean.

      I baked a custard pie yesterday, and spilled egg and milk mixture while placing pie in the oven. What a stinky burned on mess!!! An EasyClean oven would be a blessing for this kitchen klutz!!!

      I tend to overfill my cake pans so I can level them to get a perfect two inch layer, but sometimes they run over into the oven.

      The recipe that leaves my oven messy is my enchiladas! I stuff the baking dishes full and use lots of cheese and sauce which, even if I cover them, tends to bubble and slosh over the edge when I pull them out :)

      Since I’m realtively new to the baking scene, I haven’t had much in the way of mishaps, but I can tell you that making ice cream cupcakes can get really messy when they tip over!

      home made spaghetti sauce sometimes I make it pretty full and it spills over the sides and makes a mess. I got to hurray and clean it or it will smoke and burn black and stink up my kitchen badly.
