Our family may have a slight pasta problem. We could truly eat it every day. Spaghetti, macaroni, ziti, linguine, bowtie, you get the idea. One of my family’s absolute favorites is my cajun chicken pasta. It makes it onto our weekly dinner menu at least every other week. It makes me truly happy because it’s a rare chance to get my son to eat grilled chicken. It is truly delicious, and couldn’t be more simple to make.
1 box of penne pasta
1 jar of store bought alfredo sauce
2 cups of finely shredded mozzarella cheese
3 chicken breasts
your choice of cajun seasoning
~ Prep It~
Preheat your oven to 350 degrees.
Grill Your Chicken Breasts and shred with fork. Boil your pasta and drain in a colander.
Spray an oven safe dish with cooking spray, and add your cooked penne pasta. Mix in your container of alfredo sauce and shredded grilled chicken. Gently stir ingredients together in your dish. Sprinkle with cajun seasoning, and cover the entire top with mozzarella cheese.
Place uncovered in the center of your oven and bake for 20 minutes. Turn your oven’s broiler on high and leave your dish in until the top of your cheese is slightly brown. (You can skip the broiling if you like.)
Place a serving on your plate with a nice salad (I paired mine with a grilled romaine salad). Top with fresh parmesan cheese and a sprinkle of red pepper flakes!
