    One Pot Turkey and Sweet Potato Recipe via Just Us Four

    Hi everyone! I'm Shannah from Just Us Four back again to share with you another recipe.  For us, once the weather gets nice, we try to make dinner as simply as possible with as few dishes to do.  We want to be spending our time outdoors and not slaving over the stove or washing countless dishes in the sink!  This one one pot turkey and sweet potato recipe is perfect for just those nights. It is full of flavor but cooks fast and uses very few dishes.

    I love cooking with sweet potatoes because they have a lot of nutritional value that you don't get from a regular spud.  Plus, they add such a nice color to any meal!  I, honestly, used to hate them because the only way I had ever had sweet potatoes was doused in sugar and syrup and then topped with marshmallows...way too sweet for me.  In this dish, the sweet potatoes add a little hint of sweet flavor but definitely don't overpower it.

    One Pot Turkey and Sweet Potato Recipe

    Ingredients

    Scale
    • 1 ½ lbs ground turkey
    • 2 sweet potatoes, peeled and diced
    • 1 onion, finely chopped
    • 3 cloves garlic, finely chopped
    • 1 tsp oil
    • 2 medium tomatoes, diced
    • 4 Tbsp soy sauce
    • 2 Tbsp lemon juice
    • ¼ cup raisins {optional}

    Instructions

    1. In a large pot or wok, heat oil over medium heat. Add onion and garlic. Saute for 5 minutes or until softened. Add tomatoes and cook until slightly browned.
    2. Add turkey and cook, stirring to crumble until done. Add soy sauce.
    3. Add sweet potatoes to pan and cook on low until soft; about 10 minutes
    4. Remove from heat and squeeze lemon juice over dish. Stir in raisins if using and serve over rice.
