Last week, I was introduced to an amazing phenomenon...overnight oats. My friend Julie said they were to die for, and to be honest, I was super skeptical. I mean, I like oatmeal. I like warm oatmeal with maple syrup and brown sugar. Refrigerated oats just sounded odd. But, I'd like to think that I am open minded, so when I got home this weekend, I decided to try them for myself. I can now say, I'm a changed woman. I love overnight oats, and have made them three different ways this weekend! They are healthy and yummy and can be made with endless ingredients or just a couple!
My favorite are raspberry and almond refrigerator oats, with blueberry banana as a close second! If you like, you can add chocolate, coconut, strawberries...just use your imagination!

Overnight oats are so healthy and easy to make! You can even get your kiddos involved in making there own to make it more fun for them. They are great on the go, and can be eaten as a meal or a snack! I think next, I'll make some using coconut milk and pineapple!
Happy eating!
