Low Carb Zucchini Pizza Boats

Description

Finding different foods to eat when you are trying to eat healthy can become a bit tedious, so when I discovered these delicious low carb zucchini pizza boats, I was thrilled! These are the perfect way to sneak in vegetables, are really filling, and are so easy to make! You can add any meats, veggies or cheeses you like, and they are sure to become a family favorite meal!


Ingredients

  • 4 Zucchinis
  • 1 cup tomato sauce
  • 2 garlic cloves
  • ½ tsp salt
  • ½ tsp oregano
  • 1 ½ cup shredded mozzarella cheese
  • parmesan cheese

 


Instructions

  1. Grease a baking sheet or line it with baking paper.

  2. Trim off the ends of the zucchini and cut them in halves, lengthwise.

  3. Use a small spoon to remove part of the inside of the zucchini to shape them like boats.

  4. To make the sauce, place tomato sauce, garlic cloves, salt and oregano in a blender and blend until smooth.

  5. Spoon the sauce in the inside of each zucchini, making sure not to overfill them.

  6. Top the zucchini boats with shredded mozzarella.

  7. Bake for 25 minutes or until zucchinis are fork tender and mozzarella is melted and browning on top.

  8. Sprinkle with parmesan cheese.

Notes

You can make these zucchini pizza boats using store bought pizza sauce if you don't want to make your own...just skip the tomato sauce, garlic, salt and oregano.

Top your pizza boats with any toppings you desire, like pepperoni, ham, sausage, banana pepper, onions and more!
