Tacos have been our family's favorite meal for many years, and now these Easy Air Fryer Taco Bites just may take their place! Instead of using taco shells, I used puff pastry (phyllo dough) to make the shells, and they perfectly crunchy and delicious. They are filled with beefy, cheesy goodness that your kiddos will love and they literally only take a few minutes and ingredients to make! These taco bites are the perfect appetizer or dinner!

I'm always looking for easier, less expensive ways to feed my family, and this meal or appetizer (we love apps as a meal in our home) is both of those things. You don't need a ton of ingredients to make it, it makes a ton and it's super easy to put together. It's also fun because you can add different toppings or set up a fun "taco bar" with different items that your family or friends can add to the tops of their taco bites. I love to add avocado and sour cream to mine, my husband loves adding jalapenos to his, and our kids like theirs just as they are.
I like to make mine in our air fryer because it heats them all the way around and the shells come out crispy every time. They can also be made in the oven if you don't have an air fryer...just cook them a bit longer in the oven on the same temp.
How to Make Air Fryer Taco Bites
What you will need:
- 1 lb. ground beef, browned and drained
- 2 tablespoons of taco seasoning (equivalent of 1 seasoning packet)
- ⅓ cup of water
- ½ can of Rotel with green chiles
- 1 pack of refrigerated or frozen phyllo dough (puff pastry)
- shredded colby jack cheese
- Start by browning a pound of ground beef, then drain. Add 2 tablespoons of taco seasoning, ⅓ cup of water and ½ can of Rotel with green chiles and let simmer for 8-10 minutes. Then set aside.
2. Roll out one sheet of refrigerated or frozen puff pastry and cut into 2 inch squares. Place them in a greased (I use avocado oil cooking spray) mini muffin pan and push the middles down so they form a shell.
3. Fill each shell to the top with your taco beef mixture.
4. Air fry at 400° F for 6-8 minutes or until the puff pastry has turned a golden color.
5. Top each taco bite with shredded cheese and place back in the air fryer for 1-2 minutes or until the cheese has melted.
6. Remove from the air fryer and serve with your favorite toppings!

Notes
To cook in the oven, follow the above instructions, and cook until the tops of the puff pastry shells start to turn golden.
Top with avocado, guacamole, pico, salsa, jalapenos, shredded lettuce and more!

I would like to make a correction to your recipe. Puff pastry is different from phyllo dough.Peggy pastry gets really puffy and is great to use in your recipe.Phyllo dough is very thin sheets of pastry and need to be used with several layers and then get really crunchy and are also great used with your recipe.Canned biscuits rolled out a little bit or premise pie shells rolled out a little bit are also great.The choices are endless.This is a great recipe .Thanks for sharing it with all of us.
