One of my favorite things on the planet is a chicken salad sandwich. I'm not much of a sandwich eater per say, but I could eat this Cranberry Chicken Sandwich every day! I use it making my super easy crock pot shredded chicken and a few other ingredients, and it turns out perfect every time!
I usually store it in my refrigerator for up to a week if it lasts that long...it's a family favorite after all!

Ingredients
- 3 Cups Shredded Chicken Breasts
- 1 Cup of Mayonnaise
- ½ Cup of Dried Cranberries
- ¼ Cup of Pecans (chopped)
- ¼ Cup Chopped Celery
- Salt and Pepper To Taste
Instructions
- Mix well. Refrigerate for two hours before eating so the dried cranberries have time to soften a bit.

This chicken salad is perfect for lunch, brunch, picnics, get togethers, etc. During the spring and summer I like to make it and take it to the pool with us...it's perfect for a poolside picnic!
You can also pair it with my favorite Sunshine Fruit Salad...yummy!
